Chicken Lettuce Wraps
1 pound ground chicken
¼ cup green onion, minced
2 tablespoons fresh basil, chopped
3 tablespoons soy sauce
2 tablespoons fresh lime juice
2 cloves garlic, minced
1 large jalapeño, minced
1 tablespoon sugar
1 tablespoon garlic chili sauce
1 tablespoon canola or peanut oil
Iceburg or Boston whole lettuce leaves
Shredded carrots
Chopped peanuts
Combine first 9 ingredients in medium bowl; stir to blend. Heat oil in skillet over medium-high heat. Add chicken and cook for 4-5 minutes or until cooked through.
Serve immediately with whole lettuce leaves. Serve carrots & peanuts as garnish.
Chicken Lettuce Wrap Sauces
Sauce #1:
¼ cup soy sauce
¼ cup rice vinegar
1 tablespoon chile oil
1 tablespoon sugar
2 green onions, chopped
Garlic chile paste to taste
Combine all ingredients in small saucepan and cook until well mixed & heated through.
Sauce #2:
¼ cup soy sauce
2 tablespoons dry sherry
1 tablespoon rice wine vinegar
1 tablespoon sesame oil
1 green onion, sliced thinly
1 teaspoon grated fresh ginger
1 tablespoon sugar
Mix all ingredients in a small bowl until well combined.
